Method

Preparing the Steak

    Season the Steak

    Pat the New York Strip Steaks dry with paper towels. Rub each steak with olive oil, then season generously with salt and black pepper on both sides.

    Cook the Steak

    Heat a skillet or grill over high heat. Once hot, add the steaks and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing.

Making Hand-Cut Fries

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into even strips about 1/4 inch thick.

    Fry the Potatoes

    In a large pot, heat vegetable oil to 350°F (175°C). Carefully add the potato strips in batches, frying until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, then sprinkle with salt.

Making Peppercorn Sauce

    Sauté Shallots

    In a saucepan, melt the butter over medium heat. Add finely chopped shallots and sauté until translucent, about 2-3 minutes.

    Prepare the Sauce

    Add crushed black peppercorns and beef broth to the saucepan. Bring to a simmer, then stir in the heavy cream. Allow the sauce to thicken, about 5 minutes. Season to taste.

Making Chimichurri

    Blend Ingredients

    In a food processor, combine fresh parsley, garlic cloves, red wine vinegar, olive oil, red pepper flakes, and salt. Blend until smooth.

Cooking Jumbo Shrimp (optional)

    Prepare the Shrimp

    In a bowl, combine jumbo shrimp, minced garlic, lemon juice, olive oil, salt, and black pepper. Toss to coat.

    Cook the Shrimp

    Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they are pink and opaque.
