Cosmic Cheesecake Assembly

    Prepare the Crust

    In a medium bowl, combine the chocolate biscuit crumbs and melted unsalted butter. Mix well until the crumbs are evenly coated. Press this mixture into the bottom of a springform pan to form a crust.

    Make the Chocolate Cheesecake Filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add granulated sugar and cocoa powder, mixing until well combined. Add the eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract.

    Bake the Cheesecake

    Pour the chocolate cheesecake filling over the prepared crust in the springform pan. Smooth the top with a spatula. Bake in a preheated oven at 325°F (160°C) for about 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour. Then, remove from the oven and let it cool to room temperature.

    Prepare Raspberry Gel

    In a small saucepan, heat raspberry puree over medium heat. Sprinkle gelatin powder over the puree and stir until dissolved. Allow it to cool slightly before pouring it over the cooled cheesecake.

    Chill the Cheesecake

    Refrigerate the cheesecake for at least 4 hours or overnight until fully set.

    Make the Chocolate Dome

    Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave. Once melted, let it cool slightly. Pour the melted chocolate into a bowl and swirl it around to coat the sides. Let it set for a few minutes, then invert it over the cheesecake to create a dome.

    Whip the Cream

    In a mixing bowl, whip heavy cream with sugar until soft peaks form. Pipe or spread the whipped cream around the edges of the cheesecake for decoration.

    Carefully slice the cheesecake and serve with additional raspberry puree or chocolate shavings if desired.
