Wine Production Process

Harvesting the Grapes
Harvest Albarino grapes when they are fully ripe, typically in late September. Ensure that the grapes are handpicked to avoid damage.

Crushing and Pressing
Once harvested, crush the grapes gently to release the juice. Transfer the juice to a press to extract maximum liquid without crushing the seeds.

Fermentation
Add yeast to the grape juice to initiate fermentation. Maintain the temperature between 12-15°C (54-59°F) for optimal fermentation. This process usually lasts around 15-20 days.

Adding Sulfur Dioxide
After fermentation, add sulfur dioxide to the wine to prevent oxidation and spoilage. The dosage should be around 50 mg/l.

Aging
Transfer the wine to stainless steel tanks for aging. Allow it to age for at least 4-6 months to develop the flavor.
