    Prepare the Potatoes

    Preheat the oven to 200°C (400°F). Cut the baby potatoes in half, toss them with 2 tablespoons of olive oil, salt, pepper, and half of the fresh herbs. Spread them on a baking sheet.

    Roast the Potatoes

    Place the potatoes in the preheated oven and roast for about 25-30 minutes or until golden brown and tender.

    Prepare the Sea Bass

    While the potatoes are roasting, clean the sea bass and pat it dry. Make a few diagonal cuts on each side of the fish. Rub the fish with the remaining olive oil, minced garlic, salt, and pepper. Stuff the cavity with lemon slices and some fresh herbs.

    Cook the Broccolini

    In a pot of boiling salted water, blanch the broccolini for 2-3 minutes until bright green, then transfer to ice water to stop the cooking. Drain and set aside.

    Bake the Sea Bass

    After the potatoes have roasted for about 15 minutes, add the sea bass to the oven. Bake for approximately 20-25 minutes or until the fish flakes easily with a fork.

    Prepare the Herb Vinaigrette

    In a small bowl, mix the remaining fresh herbs, 2 tablespoons of olive oil, a squeeze of lemon juice, salt, and pepper to taste.

    Serve

    Once the fish is cooked, serve it whole on a platter with roasted potatoes and broccolini on the side. Drizzle with the herb vinaigrette before serving.
