    Prepare the Short Ribs

    Season the short ribs with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the ribs on all sides until browned. Remove and set aside.

    Sauté the Aromatics

    In the same skillet, add chopped onion and minced garlic. Sauté until the onion is translucent.

    Braise the Ribs

    Add beef broth and BBQ sauce to the skillet. Return the short ribs to the skillet, cover, and reduce heat to low. Allow to braise for 2.5 to 3 hours until tender.

    Cook the Potatoes

    While the ribs are braising, preheat the oven to 400°F (200°C). Toss cubed potatoes with olive oil, fresh herbs, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.

    Sauté the Spinach

    In a separate pan, melt butter over medium heat. Add fresh spinach and sauté until wilted. Season with salt and pepper to taste.

    Serve

    Once the short ribs are tender, serve them with the sautéed spinach and herb roasted potatoes. Drizzle with additional BBQ jus from the braising liquid.
