Lamb Chops

    Marinate the Lamb Chops

    In a bowl, mix together olive oil, minced garlic, cumin, coriander, paprika, cinnamon, salt, and black pepper. Rub this mixture all over the lamb chops and let them marinate for at least 30 minutes.

    Cook the Lamb Chops

    Heat a grill or a skillet over medium-high heat. Sear the lamb chops for 3-4 minutes on each side for medium-rare, brushing with honey during the last minute of cooking. Remove from heat and let rest.

Honey Glazed Baby Carrots

    Prepare the Carrots

    In a skillet, melt butter over medium heat. Add baby carrots and sauté for about 5 minutes until slightly tender.

    Glaze the Carrots

    Add honey, thyme, and salt to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the carrots are glazed and tender.

Moroccan Basmati Rice Pilaf

    Cook the Rice

    In a saucepan, heat some oil and sauté the chopped onion and minced garlic until soft. Add the basmati rice and stir for 2 minutes.

    Add Liquid and Fruit

    Pour in the vegetable broth, add chopped dried apricots, and season with cinnamon and salt. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until rice is fluffy.

    Finish the Pilaf

    Fluff the rice with a fork and stir in slivered almonds before serving.

Lamb Jus

    Make the Lamb Jus

    In a pot, add lamb bones, chopped onion, chopped carrot, garlic cloves, and water. Bring to a boil, then reduce heat and simmer for about 2 hours. Strain the liquid and season with salt.
