Prepare the Dough
In a small bowl, combine warm milk, granulated sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy. In a large mixing bowl, combine the mashed sweet potatoes, melted butter, beaten egg, and salt. Add the yeast mixture once it is frothy. Gradually add the flour, mixing until a soft dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Beignets
Once the dough has risen, punch it down and roll it out to about 1/2 inch thickness. Cut into squares or diamonds using a knife or pizza cutter. Let the cut pieces rest for about 30 minutes.

Fry the Beignets
In a deep frying pan, heat vegetable oil over medium heat. Carefully place a few beignets in the hot oil, frying until golden brown on both sides (about 2-3 minutes per side). Remove and drain on paper towels.

Dust the warm beignets with powdered sugar before serving. Optionally, serve with Jamaican rum sauce on the side.
