    Prepare the Croutons

    Preheat the oven to 375°F (190°C). Cut cornbread into cubes and spread on a baking sheet. Drizzle with olive oil, sprinkle with salt, and toss to coat. Bake for 10-15 minutes until golden brown, stirring halfway through.

    Blister the Tomatoes

    In a skillet over medium-high heat, add a drizzle of olive oil. Add the heirloom tomatoes and cook until they blister and soften, about 5-7 minutes. Remove from heat and set aside.

    Make the Dressing

    In a bowl, whisk together lemon juice, olive oil, minced garlic, salt, and black pepper. Stir in the grated Parmesan cheese until combined.

    Assemble the Salad

    In a large bowl, combine the chopped Romaine lettuce, blistered heirloom tomatoes, and pickled cucumbers. Drizzle with dressing and toss gently to coat.

    Finish with Croutons

    Add the cornbread croutons to the salad and toss once more. Serve immediately.
