Prepare the Grits
In a medium saucepan, bring the water to a boil. Slowly whisk in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy. Stir in the heavy cream, butter, salt, and pepper. Keep warm.

Cook the Shrimp
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the diced onion, bell pepper, and garlic, and sauté until softened, about 5 minutes.

Add Seasoning
Sprinkle in the Creole seasoning and mix well. Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.

Finish the Sauce
Pour in the chicken broth and allow it to simmer for another 2-3 minutes. Stir in the crumbled bacon and adjust seasoning with salt and black pepper to taste.

Serve
To serve, spoon the creamy grits onto plates and top with the garlicky shrimp mixture. Garnish with sliced green onions.
