Preparation Steps

  1. 1

    Boil the Eggs

Place the eggs in a pot and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pot and remove from heat. Let sit for 12 minutes.

  2. 2

    Cool and Peel

After 12 minutes, transfer the eggs to an ice bath to cool for about 5 minutes. Once cooled, peel the eggs and slice them in half lengthwise.

  3. 3

    Prepare the Filling

In a bowl, scoop out the yolks of the eggs and mash them with mayonnaise, Dijon mustard, hot sauce, paprika, salt, and black pepper until smooth.

  4. 4

    Add Mix-ins

Fold in the pickled red onion and capers into the yolk mixture.

  5. 5

    Fill the Egg Whites

Using a spoon or piping bag, fill the egg white halves with the yolk mixture.

  6. 6

    Garnish

Top the filled eggs with micro greens for garnish.

  7. 7

    Serve

Serve immediately or refrigerate until ready to serve.
