    Prepare the Ingredients

    Gather all ingredients and chop the vegetables.

    Sauté the Meat

    In a large pot, heat olive oil over medium heat. Add diced chicken and Andouille sausage, cooking until browned.

    Add Vegetables

    Stir in the chopped onion, bell pepper, celery, and garlic. Cook until the vegetables are tender.

    Combine with Rice

    Add the red rice and stir well to combine with the meat and vegetables.

    Add Liquids and Seasoning

    Pour in the chicken broth, diced tomatoes, and cajun seasoning. Bring to a boil.

    Reduce heat to low, cover, and let simmer for 20-25 minutes or until the rice is cooked and liquid is absorbed.

    Stir in the shrimp and cook for an additional 5 minutes, until shrimp is pink and cooked through.
