Season the Ribs
Rub the baby back ribs with salt, black pepper, and garlic powder evenly on all sides. Allow them to sit at room temperature for about 30 minutes to absorb the flavors.

Prepare the Smoker
Soak the pecan wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Place the seasoned ribs in the smoker and add the soaked pecan wood chips. Smoke the ribs for about 4 hours, maintaining the temperature and adding more wood chips as necessary.

In a saucepan, combine soy sauce, honey, rice vinegar, sesame oil, grated ginger, minced garlic, and Sriracha. Bring to a boil over medium heat, then reduce to low and simmer for 10 minutes until slightly thickened.
