Preparation of Salmon

    Marinate the Salmon

    In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in the bowl and coat them well with the marinade. Let them sit for at least 30 minutes.

    Prepare the Vegetables

    While the salmon is marinating, wash and chop the zucchini and bell pepper into bite-sized pieces. Trim the ends of the asparagus. Rinse the cherry tomatoes and leave them whole.

Grilling

    Grill the Salmon

    Preheat the grill to medium-high heat. Place the marinated salmon fillets on the grill, skin-side down. Grill for about 6-8 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

    Grill the Vegetables

    In the last 10 minutes of grilling the salmon, add the chopped zucchini, bell pepper, asparagus, and cherry tomatoes to a grill basket. Drizzle with a little olive oil, salt, and pepper. Grill the vegetables until they are tender and slightly charred, about 8-10 minutes.

Serving

    Plate the Dish

    Once the salmon and vegetables are cooked, remove them from the grill. Serve the salmon fillets alongside the grilled vegetables on a plate. Optionally, drizzle with extra lemon juice before serving.
