Prepare Mussels

    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt or debris. Remove the beards by pulling them away from the shell.

    Cook the Bacon

    In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and drain on paper towels. Leave about 1 tablespoon of bacon fat in the pot.

    Sauté Vegetables

    In the same pot, add olive oil, shiitake mushrooms, and minced garlic. Sauté for about 5 minutes until the mushrooms are tender. Add cherry tomatoes and cook until they start to burst.

    Add Mussels

    Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes until the mussels open up. Discard any that remain closed.

Prepare Collard Greens

    Wash and Chop Greens

    Wash the collard greens thoroughly under cold water. Remove the tough stems and chop the leaves into bite-sized pieces.

    Sauté Onion

    In another pot, add a bit of olive oil and sauté chopped onion over medium heat until translucent, about 5 minutes.

    Cook Collard Greens

    Add the collard greens to the pot along with the chicken broth, salt, and black pepper. Cover and simmer for about 15-20 minutes until the greens are tender.

Serve

    Prepare Baguette

    Slice the baguette into pieces and serve alongside the mussels and collard greens for dipping.

    Plate and Serve

    Serve the mussels in a large bowl with the sautéed vegetables on top. Place the collard greens on the side and enjoy with fresh baguette.
