For the Coffee Rubbed Pork Loin

Prepare the Rub
In a small bowl, combine ground coffee, brown sugar, paprika, salt, black pepper, garlic powder, and onion powder. Mix well.

Rub the Pork
Pat the pork loin dry with paper towels. Rub the coffee mixture all over the pork loin, ensuring it is evenly coated. Let it sit at room temperature for 30 minutes.

Cook the Pork
Preheat the oven to 400°F (200°C). Place the pork loin in a roasting pan and roast for 25-30 minutes, or until the internal temperature reaches 145°F (63°C). Let it rest for 10 minutes before slicing.

Combine and Add Cream
Add the cooked potatoes back into the pot with cabbage. Pour in the heavy cream and stir to combine. Cook for another 5 minutes until heated through.
