Jalapeño Johnny Cake

Sheet Pan Biscuits

Sweet Potato Cane Syrup Butter

Pepper Jelly

Method

Jalapeño Johnny Cake

  1. 1

    Prepare the Batter

In a large mixing bowl, combine the cornmeal, flour, baking powder, sugar, and salt. Mix well.

  2. 2

    Add Wet Ingredients

In another bowl, whisk together the milk, eggs, and melted butter. Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the diced jalapeños.

  3. 3

    Cook the Johnny Cake

Preheat a greased skillet over medium heat. Pour in a ladle of batter and cook until bubbles form on the surface and the edges look set, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown. Repeat with remaining batter.

Sheet Pan Biscuits

  1. 4

    Prepare the Dry Ingredients

In a large bowl, mix together the flour, baking powder, and salt.

  2. 5

    Cut in the Butter

Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.

  3. 6

    Add Milk and Honey

Pour in the milk and honey, stirring until just combined. Do not overmix.

  4. 7

    Bake the Biscuits

Preheat the oven to 425°F (220°C). Spread the dough on a greased sheet pan, cutting into squares. Bake for 15-20 minutes until golden brown.

Sweet Potato Cane Syrup Butter

  1. 8

    Mix the Ingredients

In a bowl, combine the mashed sweet potato, softened butter, and cane syrup. Mix until smooth and creamy.

Pepper Jelly

  1. 9

    Serve the Jelly

Spoon the pepper jelly into a small serving dish, ready to be served alongside the biscuits and johnny cakes.
