Method

Preparing the Short Ribs

    Season the Ribs

    Pat the beef short ribs dry with paper towels. Season generously with salt, black pepper, and five spice powder on all sides.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear until browned on all sides, about 3-4 minutes per side. Remove from the pot and set aside.

    Sauté Aromatics

    In the same pot, add chopped onions and cook until softened, about 5 minutes. Add minced garlic and sauté for an additional minute.

    Braise the Ribs

    Return the short ribs to the pot. Add beef broth, soy sauce, honey, and bay leaves. Bring to a boil, then reduce heat to low and cover. Simmer for 2-3 hours or until the meat is tender and falling off the bone.

Making the Sweet Potato Carrot Purée

    Cook Vegetables

    In a pot, add sweet potatoes and diced carrots. Cover with water and bring to a boil. Cook until tender, about 15-20 minutes. Drain.

    Blend Purée

    In a blender, combine the cooked sweet potatoes and carrots, butter, salt, black pepper, and cream. Blend until smooth and creamy. Adjust seasoning to taste.

Sautéing Crawfish and Vegetables

    Sauté Vegetables

    In a skillet, heat olive oil over medium heat. Add julienned carrots and broccolini. Sauté for about 5-7 minutes until tender-crisp.

    Add Crawfish

    Add the crawfish tails to the skillet and cook for an additional 3-4 minutes until heated through. Season with salt and black pepper to taste.

Preparing the Fermented Black Bean Teriyaki Sauce

    Combine Ingredients

    In a small saucepan, combine fermented black bean paste, soy sauce, brown sugar, rice vinegar, minced ginger, and minced garlic. Stir well.

    Simmer Sauce

    Bring the sauce to a simmer over medium heat, stirring occasionally, until slightly thickened, about 5-7 minutes. Remove from heat.
