Method
Preparation of Chicken Wings

Marinate the Chicken Wings
In a large bowl, combine the buttermilk, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Add the chicken wings and ensure they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Flour Mixture
In a separate bowl, combine the all-purpose flour, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Mix well until evenly combined.
Frying the Wings

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure accuracy.

Dredge the Chicken Wings
Remove the chicken wings from the buttermilk marinade, allowing excess to drip off. Dredge each wing in the seasoned flour mixture, ensuring they are well coated.

Carefully add the coated chicken wings to the hot oil in batches, avoiding overcrowding. Fry for about 10-12 minutes, or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

Use a slotted spoon to remove the fried wings from the oil and place them on a plate lined with paper towels to drain excess oil.
Saucing the Wings

In a small saucepan over medium heat, combine the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, salt, and black pepper. Stir until heated through and well combined. Toss the fried wings in the BBQ sauce until evenly coated.

In a small saucepan over medium-low heat, melt the unsalted butter. Add the hot sauce, garlic powder, cayenne pepper, and salt. Stir until combined and heated through. Toss the fried wings in the buffalo sauce until evenly coated.
