Preparation Steps

   Chill the Glass

   Begin by chilling a rocks glass. Fill it with ice water and set it aside while you prepare the cocktail.

   Prepare the Glass with Absinthe

   Take the chilled rocks glass, discard the ice water, and add the absinthe. Swirl the glass to coat the inside with absinthe, then discard any excess.

   Mix the Cocktail

   In a mixing glass, combine the rye whiskey, simple syrup, and Peychaud's bitters. Fill the mixing glass with ice and stir well for about 20-30 seconds until the mixture is chilled.

   Strain into Glass

   Strain the chilled cocktail mixture into the prepared rocks glass, ensuring no ice is transferred.

   Garnish

   Take the lemon peel and twist it over the drink to release its oils, then either drop it into the glass or discard it for a cleaner presentation.
