Preparing the Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 cup of grits and 1 tsp of salt. Reduce the heat to low, cover, and cook for about 20-25 minutes, stirring occasionally until the grits are thick and creamy.

    Add Milk and Cheese

    Once the grits are cooked, stir in 1 cup of milk, 2 tbs of butter, 1 cup of cheddar cheese, and black pepper to taste. Mix well until the cheese is melted and the mixture is creamy.

Cooking the Shrimp

    Sauté the Shrimp

    In a large skillet, heat 2 tbs of olive oil over medium heat. Add 2 tbs of minced garlic and sauté for 1 minute until fragrant.

    Season and Cook Shrimp

    Add the raw shrimp to the skillet. Sprinkle with 2 tbs of Cajun seasoning and 2 tbs of lemon juice. Cook for about 3-5 minutes or until the shrimp turn pink and are cooked through. Stir occasionally.

    Add Broth and Green Onions

    Pour in 0.5 cups of chicken broth and stir in 0.5 cups of chopped green onions. Let it simmer for 2-3 minutes to combine the flavors.

Assembly

    Serve the Dish

    In serving bowls, spoon a generous amount of the creamy grits. Top with the seasoned shrimp and pour some of the savory sauce over the top. Garnish with extra green onions if desired.
