Method

Crust Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  2. 2

    Add Ice Water

Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

  3. 3

    Chill the Dough

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  4. 4

    Preheat Oven

Preheat your oven to 350°F (175°C).

  5. 5

    Roll Out the Dough

On a floured surface, roll out the chilled dough to fit a 9-inch pie pan. Transfer the dough to the pan and trim any excess.

  6. 6

    Blind Bake the Crust

Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 10 minutes, then remove the weights and parchment and bake for an additional 5 minutes until lightly golden.

Filling Preparation

  1. 7

    Mix Filling Ingredients

In a large mixing bowl, combine the melted butter, granulated sugar, light corn syrup, eggs, vanilla extract, and salt. Whisk until smooth and well combined.

  2. 8

    Add Pecans

Stir in the chopped pecans until they are evenly distributed throughout the filling mixture.

  3. 9

    Fill the Crust

Pour the pecan filling into the prepared pie crust, spreading it evenly.

  4. 10

    Bake the Pie

Bake the pie in the preheated oven for 60-70 minutes, or until the filling is set and a knife inserted in the center comes out clean.

  5. 11

    Cool the Pie

Allow the pie to cool on a wire rack for at least 2 hours before slicing. This will help the filling set properly.
