Fried Chicken

Method

Fried Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine the buttermilk and salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper. Add the chicken pieces to the mixture, ensuring they are well coated. Cover and refrigerate for at least 4 hours or overnight.

  2. 2

    Prepare the Flour Mixture

In a separate bowl, mix the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Set aside.

  3. 3

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 4

    Coat and Fry the Chicken

Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, coating thoroughly. Carefully place the chicken in the hot oil, frying in batches to avoid overcrowding. Fry for 12-15 minutes per side until golden brown and cooked through. Use a meat thermometer to ensure an internal temperature of 165°F (75°C).

  5. 5

    Drain the Chicken

Once cooked, transfer the fried chicken to a wire rack or paper towel-lined plate to drain excess oil.

Coleslaw

  1. 6

    Prepare the Vegetables

In a large bowl, combine the shredded cabbage and shredded carrot.

  2. 7

    Make the Dressing

In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

  3. 8

    Combine and Chill

Pour the dressing over the cabbage mixture and toss to combine thoroughly. Cover and refrigerate for at least 30 minutes before serving.

Biscuits

  1. 9

    Preheat the Oven

Preheat your oven to 450°F (232°C).

  2. 10

    Mix Dry Ingredients

In a large bowl, combine the flour, baking powder, and salt.

  3. 11

    Cut in the Butter

Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

  4. 12

    Add Milk

Make a well in the center of the mixture and pour in the milk. Stir until just combined.

  5. 13

    Shape the Biscuits

Turn the dough out onto a floured surface and knead gently. Pat out to about 1-inch thickness. Use a biscuit cutter to cut out the biscuits.

  6. 14

    Bake

Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.
