Method

Crust Preparation

  1. 1

    Make the Pie Crust

In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, unsalted butter cut into small pieces. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

  2. 2

    Form the Dough

Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  3. 3

    Roll Out the Dough

Once chilled, roll out the dough on a floured surface to fit a 9-inch pie pan. Transfer the dough to the pie pan and trim the excess. Prick the bottom with a fork and refrigerate again for 15 minutes.

Filling Preparation

  1. 4

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 5

    Prepare the Filling

In a large mixing bowl, whisk together the granulated sugar, brown sugar, and salt. Add the melted unsalted butter, corn syrup, eggs, vanilla extract, and bourbon. Mix until well combined.

  3. 6

    Add Pecans and Chocolate

Fold in the chopped pecans and dark chocolate chips into the filling mixture.

  4. 7

    Assemble the Pie

Pour the filling into the prepared pie crust, ensuring an even distribution of pecans and chocolate.

  5. 8

    Bake

Bake the pie in the preheated oven for 50-60 minutes, or until the filling is set and the top is golden. If the edges of the crust brown too quickly, cover them with foil.

  6. 9

    Cool and Serve

Remove the pie from the oven and allow it to cool on a wire rack for at least 2 hours before slicing. Serve at room temperature or slightly warmed.
