Method
For the Chicken
- 1
Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add the chicken thighs and ensure they are fully coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.
- 2
Prepare the Coating
In a separate bowl, mix the all-purpose flour and cornstarch. This will be used to coat the chicken before frying.
- 3
Fry the Chicken
Heat oil in a large skillet over medium-high heat. Remove the chicken from the marinade and dredge each piece in the flour mixture, shaking off excess. Fry the chicken in hot oil until golden brown and crispy, about 6-8 minutes per side. Ensure the internal temperature reaches 165°F (74°C). Once done, remove the chicken and let it drain on paper towels.
For the Waffles

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Make the Waffle Batter
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; some lumps are okay.
- 7
Cook the Waffles
Preheat your waffle iron according to the manufacturer's instructions. Pour the batter into the preheated waffle iron and cook until golden brown and crispy, about 3-5 minutes per waffle.
