Prepare the Catfish

Marinate the Catfish
In a medium bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and add flavor.

Prepare the Breading
In a shallow dish, combine cornmeal, flour, Cajun seasoning, salt, and pepper. Mix well.

Bread the Catfish
Remove catfish fillets from buttermilk and let excess drip off. Dredge each fillet in the cornmeal mixture, ensuring they are fully coated.

Fry the Catfish
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully place the breaded catfish fillets in the oil, frying for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Make the Remoulade

Combine Ingredients
In a bowl, mix together mayonnaise, Dijon mustard, chopped capers, horseradish, paprika, lemon juice, salt, and pepper until well combined. Adjust seasoning to taste.
Assemble the Po' Boys

Prepare the Sandwiches
Slice the baguette or hoagie rolls in half lengthwise. Spread a generous amount of remoulade on both sides of the bread.

Layer the Ingredients
Place a layer of shredded lettuce on the bottom half of the bread, followed by slices of tomato. Top with the fried catfish fillets.

Finish the Sandwich
Close the sandwich with the top half of the bread. Optionally, add extra remoulade on top of the fish before closing.
