Chicken Preparation

Prepare the Chicken
Rub the blackening seasoning evenly over both sides of the chicken breasts.

Cook the Chicken
Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice blackened crust.

Rest the Chicken
Remove the chicken from the skillet and let it rest for 5 minutes before slicing.
Pico de Gallo Preparation

Combine Ingredients
In a mixing bowl, combine diced tomatoes, red onion, chopped cilantro, minced jalapeño, and lime juice.

Season the Pico de Gallo
Add salt to taste and mix well. Allow it to sit for at least 10 minutes to let the flavors meld.
Avocado Preparation

Prepare the Avocado
Slice the avocado in half, remove the pit, and slice it into thin wedges.
Assembly

Serve the Dish
Slice the rested chicken and place it on a plate. Top with house pico de gallo and arrange the avocado slices on the side.
