Pulled Pork Preparation

Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a small bowl, mix together the brown sugar, paprika, salt, black pepper, cumin, and chili powder. Rub this mixture all over the pork chunks.

Add to Slow Cooker
Place the seasoned pork in a slow cooker. Chop the onion and garlic, and add them to the slow cooker.

Add Liquids
Pour the apple cider vinegar and BBQ sauce over the pork.

Cook
Cover and cook on low for 8 hours, or until the pork is tender and can be shredded easily.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the slow cooker and mix with the juices.
Coleslaw Preparation

Shred the Cabbage and Carrot
Finely shred the green cabbage and the carrot using a grater or food processor.

Mix the Dressing
In a bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Combine
Add the shredded cabbage and carrot to the dressing, and toss until well combined. Refrigerate for at least 30 minutes before serving.
Sandwich Assembly

Toast the Buns
Lightly toast the brioche buns on a skillet or in a toaster.

Assemble the Sandwich
Layer the pulled pork on the bottom half of each bun, top with coleslaw, and add pickles.

Place the top half of the bun on each sandwich and serve immediately.
