Preparation
- 1
Mix the Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until well combined.
- 2
Mix the Wet Ingredients
In another mixing bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
Cooking
- 3
Combine Mixtures
Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.
- 4
Heat the Pan
Preheat a non-stick skillet or griddle over medium heat. You can lightly grease the surface with a small amount of butter or cooking spray.
- 5
Cook the Pancakes
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until the edges look set and bubbles form on the surface, about 2-3 minutes. Flip and cook for an additional 1-2 minutes, until golden brown.
- 6
Serve
Serve the pancakes warm with maple syrup and a generous handful of fresh berries on top.
