Steak Preparation

Season the Steak

Rub the ribeye steak with olive oil, salt, and black pepper.

Cook the Steak

Heat a skillet over medium-high heat and sear the steak for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

Rest the Steak

Remove the steak from the skillet and let it rest for 5 minutes before slicing it open-faced.

Horseradish Mayo Preparation

Mix Ingredients

In a small bowl, combine mayonnaise, horseradish, and lemon juice. Stir well to combine.

Burgundy Reduction Preparation

Sauté Shallots

In the same skillet used for the steak, add shallots and sauté for 2-3 minutes until translucent.

Add Wine and Reduce

Pour in the burgundy wine and bring to a simmer. Reduce the liquid by half, which should take about 10 minutes.

Finish the Sauce

Remove from heat and whisk in butter until melted and the sauce is glossy.

Assembling the Dish

Prepare the Steak

Slice the rested steak thinly and place on a serving plate.

Add Toppings

Spread a generous amount of horseradish mayo on top of the steak, then layer with provolone cheese, feta cheese, and chopped green onions.

Drizzle Reduction

Finish by drizzling the burgundy reduction over the top of the assembled steak.
