Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.

    Drain the Pasta

    Once cooked, drain the macaroni in a colander and set aside. Do not rinse, as you want to keep some of the starch for the cheese sauce.

Making Cheese Sauce

    Melt the Butter

    In a saucepan over medium heat, melt the unsalted butter until bubbly but not browned.

    Add Flour

    Sprinkle the all-purpose flour over the melted butter and whisk continuously for about 1-2 minutes until the mixture is smooth and golden (this is called a roux).

    Add Milk

    Gradually pour in the milk while whisking constantly to avoid lumps. Continue to cook for about 5 minutes until the mixture thickens and begins to bubble.

    Add Cheese and Seasonings

    Remove the saucepan from heat and stir in the shredded cheddar cheese, salt, black pepper, and paprika. Mix until the cheese has melted and the sauce is smooth.

Combining Pasta and Sauce

    Combine and Serve

    Add the drained macaroni to the cheese sauce and stir until well coated. Serve hot with a side of potato chips and fresh fruit.
