Chicken Marinade

    Prepare the Marinade

    In a large bowl, combine buttermilk, hot sauce, salt, and black pepper. Mix well.

    Marinate the Chicken

    Add the chicken thighs to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or preferably overnight.

Breading

    Prepare the Breading

    In a shallow dish, whisk together flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

    Coat the Chicken

    Remove the chicken from the marinade and allow excess buttermilk to drip off. Dredge each piece in the flour mixture, pressing lightly to adhere.

Frying

    Heat the Oil

    In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 175°C (350°F).

    Fry the Chicken

    Carefully add the breaded chicken to the hot oil. Fry until golden brown and cooked through, about 6–8 minutes per side. Use a thermometer to ensure the internal temperature reaches 75°C (165°F).

    Once cooked, remove the chicken from the oil and drain on paper towels.

Spicy Mayo

    Make the Spicy Mayo

    In a small bowl, mix together mayonnaise, hot sauce, and lemon juice until well combined. Set aside.

Slaw

    In a bowl, combine shredded cabbage, grated carrot, apple cider vinegar, sugar, salt, and black pepper. Toss until everything is well coated. Let sit for at least 15 minutes to allow the flavors to meld.

Assembly

    Toast the Buns

    Toast the burger buns in a dry skillet or under a broiler until golden brown.

    Assemble the Sandwiches

    Spread a generous amount of spicy mayo on the bottom half of each bun. Top with a piece of fried chicken, followed by a scoop of slaw. Add the top bun to finish the sandwich.
