    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Mix Dry Ingredients

    In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, 0.5 teaspoon of baking soda, and 0.5 teaspoon of salt. Whisk together until well combined.

    Cut in Butter

    Add 0.5 cups of cold unsalted butter, cut into small cubes, to the dry ingredients. Use a pastry cutter or your fingers to blend the butter into the flour mixture until it resembles coarse crumbs.

    Add Buttermilk

    Make a well in the center of the mixture and pour in 3 tablespoons of buttermilk. Stir gently until the dough just comes together. Do not overmix.

    Shape the Biscuit

    Turn the dough onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick round. Use a biscuit cutter to cut out the biscuits.

    Bake

    Place the biscuits on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.

Gravy

    Cook the Sausage

    In a large skillet over medium heat, add 1 pound of ground sausage. Cook until browned, breaking it apart with a spatula as it cooks.

    Make a Roux

    Once the sausage is cooked through, sprinkle 0.5 cups of all-purpose flour over the sausage. Stir to combine and cook for about 2 minutes to create a roux.

    Add Milk

    Gradually whisk in 2 cups of milk, ensuring there are no lumps. Continue to stir as the mixture thickens.

    Season the Gravy

    Add 0.5 teaspoon of salt, 1 teaspoon of black pepper, 0.5 teaspoon of red pepper flakes, 0.5 teaspoon of garlic powder, and 0.5 teaspoon of onion powder. Stir well and let simmer for about 5-7 minutes until thickened.
