Prepare Strawberry Purée (if not using packaged)
Make purée
Hull 3–4 fresh strawberries and place them in a blender or food processor with 1 tablespoon of water. Pulse until smooth. If you prefer a very smooth texture, strain through a fine-mesh sieve to remove seeds. Measure 1 oz for the recipe and refrigerate any extra.
Mix Cocktail
Combine ingredients
In a cocktail shaker, add 2 oz Don Julio Reposado, 2 oz fresh pineapple juice, 1 oz fresh strawberry purée, 0.5 oz fresh lime juice, 0.5 oz agave syrup, and 0.25 oz orange liqueur (if using).
Add bitters and ice
Add 2 dashes of Angostura bitters (optional) and fill the shaker with ice (about 1 cup).
Shake
Secure the shaker lid and shake vigorously for 12–15 seconds until the outside of the shaker feels cold and slightly frosty. This chills and slightly dilutes the drink to balance the juices and spirit.
Strain
Double-strain the cocktail into a chilled coupette or a rocks glass filled with fresh ice using a Hawthorne and fine-mesh strainer to remove ice shards and any strawberry seeds if puréed.
Garnish & Serve
Garnish the glass with a pineapple wedge and a hulled strawberry on the rim. Optionally add a lime wheel on the side. Serve immediately.
