Prep (optional)

If you prefer a sugared rim, lightly wet the edge of a chilled coupe or cocktail glass with a lime wedge, then dip the rim into superfine sugar. Set the glass aside in the freezer or a cool place while you mix the drink.

Combine ingredients

Add 2 oz white rum, 1 oz fresh lime juice, and 0.75 oz simple syrup to a cocktail shaker.

Add ice

Fill the shaker with about 6 oz of fresh ice (enough to nearly fill the shaker).

Shake

Secure the shaker and shake vigorously for 10–15 seconds until the outside of the shaker is well chilled and slightly frosted. This both chills and dilutes the cocktail to the proper balance.

Strain and serve

Double-strain the cocktail into the chilled coupe (or a 9 oz serving glass) using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and pulp. The final drink should yield about 3.25–3.5 oz of liquid plus a small silky foam from shaking.

Garnish

Garnish with a lime wheel or twist on the rim. Serve immediately.
