Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in the diced red bell pepper and zucchini, cooking for 3-4 minutes until they start to soften.

Add the halved cherry tomatoes and spinach leaves to the skillet. Cook for an additional 2-3 minutes until the spinach wilts.

Add the cooked penne pasta to the skillet. Sprinkle with Italian seasoning, crushed red pepper flakes, salt, and black pepper. Toss everything together until well combined.
