    Prepare the Short Ribs

    Season the beef short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear until browned on all sides, about 3-4 minutes per side. Remove from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add chopped onion, minced garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Deglaze the Pot

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Allow it to simmer for about 2-3 minutes.

    Add Remaining Ingredients

    Stir in the beef broth, tomato paste, thyme, and bay leaves. Return the short ribs to the pot.

    Cook the Ribs

    Cover the pot and transfer it to a preheated oven at 325°F (163°C). Braise for 3 hours until the meat is tender.

    Serve

    Remove the pot from the oven, discard bay leaves, and serve the beef short ribs with the vegetables and sauce.
