Prepare the Bacon
Lay the thick-cut bacon slices out on a large plate or tray. Sprinkle the black pepper, brown sugar, garlic powder, smoked paprika, and salt evenly over both sides of the bacon. Let it marinate for at least 30 minutes at room temperature.

Prepare the Smoker
Soak the applewood chips in water for about 30 minutes. This will help create a steady smoke when you cook the bacon. Drain the chips before using.

Smoke the Bacon
Preheat your smoker to 200°F (93°C). Place the drained applewood chips in the smoker box or directly on the coals. Arrange the bacon slices on the grilling surface, making sure they don’t overlap. Close the lid and smoke the bacon for about 1 hour, or until it reaches your desired level of crispiness.
