    Prepare the Oven and Pans

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, sift together flour, sugar, cocoa powder, baking soda, and salt.

    Mix Wet Ingredients

    In another bowl, whisk together the oil, eggs, buttermilk, red food coloring, vanilla extract, and vinegar until smooth.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

    Bake the Cake

    Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

    Cool the Cakes

    Remove from oven and let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

    Prepare the Frosting

    In a mixing bowl, beat together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy.

    Frost the Cakes

    Once the cakes are completely cool, place one layer on a serving plate, spread a layer of frosting on top, and then place the second layer on top. Frost the top and sides of the cake.

    Dust the top of the cake with red velvet crumbles made from leftover cake scraps, if desired.
