Prepare the Meat
If using pork shoulder, smoke it for about 8 hours at 225°F until tender. If using turkey, smoke it for about 4 hours. Once cooked, let it rest for 20 minutes.

Chop or Shred
Chop or shred the smoked pork shoulder and/or turkey into bite-sized pieces.

Mix with BBQ Sauce
In a large bowl, combine the chopped pork and/or turkey with BBQ sauce. Mix well until the meat is evenly coated.

Assemble the Sandwiches
Toast the hamburger buns lightly. Place a generous portion of the BBQ meat mixture on the bottom half of each bun. Add coleslaw and pickles if desired.

Serve
Top with the other half of the bun, serve immediately, and enjoy your chopped BBQ sandwich!
