Marinate the Chicken
In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.

Prepare the Breading
In a shallow dish, mix together the flour and cornstarch. This will be used to coat the chicken.

Baking Option
Preheat your oven to 400°F (200°C). Remove the chicken from the marinade, allowing excess to drip off, then dredge in the flour mixture. Place on a baking sheet lined with parchment paper, spray lightly with baking spray, and bake for 20-25 minutes or until golden brown and cooked through.

Frying Option
In a large skillet, heat vegetable oil over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off, then dredge in the flour mixture. Fry the chicken for about 5-7 minutes per side, or until golden brown and cooked through.

Assemble the Sandwich
Toast the burger buns if desired. Spread mayonnaise on the bottom bun, add lettuce, the cooked chicken, tomato slices, and pickles. Top with the other half of the bun and serve immediately.
