Method

Bring steaks to room temperature
Remove steaks from refrigerator 30–45 minutes before cooking so they cook evenly.

Season
Pat steaks dry with paper towels. Rub both sides with 1 tbsp olive oil, then season evenly with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper per side (adjust to taste).

Baste and finish
Reduce heat to medium-high. Add 2 tbsp butter, smashed garlic cloves and rosemary sprigs to the pan. Tilt the pan and spoon melted butter over the steaks continuously for 1–2 minutes. Cook to desired doneness: about 120°F (49°C) for rare, 130°F (54°C) for medium-rare, 140°F (60°C) for medium. Use an instant-read thermometer for accuracy.

Rest and serve
Transfer steaks to a cutting board, tent loosely with foil and rest 6–8 minutes. Slice against the grain and serve with pan juices spooned over.

Grill
Place lamb chops on the hot grill and cook 3–4 minutes per side for medium-rare (internal 130°F/54°C) depending on thickness. Avoid overcrowding; work in batches if needed.

Rest & serve
Transfer to a plate and rest 5 minutes. Serve sprinkled with a little extra lemon juice if desired.
Choice of Entrée — Creamy Mushroom Chicken

Prep chicken
Pat chicken breasts dry, season both sides with 1/2 tsp salt and 1/4 tsp black pepper each. Lightly dust both sides with the 3 tbsp flour, shaking off excess.

Brown chicken
Heat 2 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add chicken skin-side down and cook 4–6 minutes until golden and crisp. Flip and cook 3–4 minutes more until the chicken is nearly cooked through. Transfer to a plate and tent with foil.

Deglaze and make sauce
Pour in 1 cup dry white wine to deglaze, scraping browned bits from the bottom. Cook until wine reduces by half (about 3–4 minutes). Add 1 cup chicken stock and bring to a simmer. Stir in 1 cup heavy cream and 1 tsp fresh thyme. Simmer until sauce thickens slightly, about 4–6 minutes.

Finish
Return chicken to the pan, spoon sauce over and simmer gently 3–5 minutes until chicken reaches 165°F (74°C) and sauce coats the back of a spoon. Adjust seasoning with salt and pepper to taste. Serve chicken topped with creamy mushroom sauce.
Choice of Entrée — Roast Lamb Kleftiko

Marinate lamb
Preheat oven to 325°F (160°C). In a bowl combine 4 tbsp olive oil, 3 tbsp lemon juice, sliced garlic, 2 tsp oregano, 1 tbsp chopped rosemary, 2 tsp kosher salt and 1 tsp black pepper. Rub mixture all over the lamb, making small slits and pushing some garlic slices into them. If time allows, marinate covered in refrigerator 2–4 hours or overnight.

Sear (optional) and prepare for roasting
Heat a heavy ovenproof pan over medium-high heat, add 1–2 tbsp olive oil and sear the lamb on all sides until browned, about 3–4 minutes per side. Transfer lamb to a roasting pan or keep in the ovenproof pan. Add 1 cup white wine (or extra stock) and scatter Kalamata olives around the meat if using.

Roast
Lay fillets skin-side down on a parchment-lined baking sheet or in a shallow roasting pan. Roast in preheated oven for 10–12 minutes for fillets ~6–7 oz, or until the flesh is opaque and flakes easily with a fork (internal temp ~135°F/57°C).
