Method

Preparation

  1. 1

    Salt the rim (optional)

If you prefer a salted rim, rub a lime wedge around the outer edge of a chilled coupe or rocks glass. Spread the coarse salt on a small plate and dip the rim into the salt so it adheres. Set the glass aside.

  2. 2

    Measure and juice

Cut a fresh lime and juice until you have 1.0 oz (about one medium lime). Strain if you prefer fewer solids. Measure 1.5 oz Blanco tequila and 0.5 oz Triple Sec. Measure 0.25 oz cane syrup (if you only have simple syrup at 1:1, use the same quantity).

  3. 3

    Build and shake

Fill a cocktail shaker with ice (about 4–6 cubes). Add the measured tequila, Triple Sec, fresh lime juice, and cane syrup to the shaker. Secure the lid and shake vigorously for 10–15 seconds until the shaker is cold and slightly frosted.

  4. 4

    Strain and serve

Double-strain (using the shaker built-in strainer and a fine mesh strainer if you want no pulp) into the prepared chilled glass. Serve over fresh ice in a rocks glass if desired, or neat in a coupe for a more classic presentation.

  5. 5

    Garnish

Garnish with a lime wheel or wedge on the rim or floated in the drink. Serve immediately.
