    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Cut the baby potatoes in half and place them in a bowl. Drizzle with 1 tablespoon of olive oil, minced garlic, salt, and black pepper. Toss to coat.

    Roast the Potatoes

    Spread the potatoes onto a baking sheet and roast in the preheated oven for about 25-30 minutes or until golden brown and tender, turning halfway through.

    Prepare the Ribeye

    While the potatoes are roasting, season the ribeye steak with salt, black pepper, and chopped fresh rosemary. Heat 2 tablespoons of olive oil in a skillet over medium-high heat.

    Cook the Ribeye

    Add the seasoned ribeye steak to the skillet and cook for about 4-5 minutes on each side for medium-rare, or longer to reach your desired doneness. Remove from heat and let rest for a few minutes.

    Slice and Serve

    Slice the ribeye against the grain into strips. In a large bowl, combine arugula with a drizzle of olive oil and toss gently. Plate the arugula, top with the sliced ribeye, and serve with the roasted potatoes on the side. Sprinkle with freshly grated Parmesan cheese.
