Prepare the Broth

In a pot, bring the vegetable or seafood broth to a gentle simmer. Keep it warm on low heat.

Sauté Aromatics

In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.

Toast the Rice

Add the Carnaroli rice to the pan, stirring for about 2 minutes until the rice is lightly toasted.

Deglaze with Wine

Pour in the white wine and stir until it's mostly absorbed by the rice.

Add Broth Gradually

Add a ladle of warm broth to the rice, stirring continuously. Once absorbed, add another ladle. Repeat this process for about 15 minutes.

Add Seafood

After 15 minutes, add the shrimp, clams, squid, and mussels to the rice. Continue adding broth and stirring until the seafood is cooked and the rice is creamy and al dente, about 5-7 more minutes.

Finish with Tomatoes and Seasoning

Stir in the diced heirloom tomatoes, chopped parsley, salt, and black pepper. Cook for an additional 2 minutes.

Serve

Remove from heat, let sit for a minute, and serve hot, garnished with extra parsley if desired.
