    Prepare the Rice

    In a saucepan, bring 2 cups of water to a boil. Add the Venere black rice and a pinch of salt. Reduce the heat to low, cover, and simmer for 30-35 minutes, or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

    Cook the Vegetables

    While the rice is cooking, wash and chop the zucchini and bell pepper. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped vegetables and sauté for 5-7 minutes until tender. Season with salt and pepper to taste.

    Sear the Salmon

    In another skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Season the salmon fillet with salt and pepper. Place the salmon skin-side down in the skillet and cook for about 4-5 minutes. Flip and cook for another 3-4 minutes until desired doneness.

    Make the Salmoriglio Dressing

    In a bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, and red pepper flakes. Adjust seasoning to taste.

    Assemble the Dish

    On a plate, serve a portion of the Venere black rice, topped with sautéed seasonal vegetables. Place the seared salmon on top and drizzle with salmoriglio dressing.
