    Prepare the Chicken

    Preheat your wood-fired oven to 375°F (190°C). Pat the chicken dry with paper towels. In a bowl, combine the juice of 2 lemons, olive oil, minced garlic, fresh thyme, salt, and black pepper. Rub this mixture all over the chicken, including under the skin for extra flavor.

    Prepare the Potatoes

    Wash and cut the potatoes into quarters. Toss them in a bowl with olive oil, salt, and pepper. Place them in a roasting pan around the chicken.

    Roast the Chicken and Potatoes

    Place the chicken in the center of the roasting pan with potatoes surrounding it. Cut the remaining lemon into slices and place them inside the chicken cavity. Roast in the wood-fired oven for about 1 hour and 15 minutes or until the internal temperature of the chicken reaches 165°F (75°C) and the juices run clear.

    Sauté the Spinach

    While the chicken is roasting, heat a tablespoon of olive oil in a skillet over medium heat. Add the spinach and sauté until wilted, about 3-5 minutes. Season with salt and pepper to taste.

    Serve

    Once the chicken is cooked, remove it from the oven and let it rest for 10 minutes before carving. Serve the chicken with roasted potatoes and sautéed spinach on the side.
