    Prepare the Spinach

    Blanch the spinach in boiling water for 2 minutes, then drain and plunge into ice water to stop cooking. Once cool, squeeze out excess water and chop finely.

    Make the Dumpling Mixture

    In a mixing bowl, combine the chopped spinach, ricotta cheese, flour, egg, salt, and nutmeg. Mix until well combined and the mixture holds together.

    Shape the Dumplings

    Using your hands, shape the mixture into small dumplings, about the size of a golf ball.

    Cook the Dumplings

    Bring a large pot of salted water to a boil. Gently drop the dumplings into the water and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

    Prepare the Butter Sauce

    In a skillet, melt the butter over medium heat until it begins to foam. Add the cooked dumplings and sauté for 2-3 minutes until they are lightly golden.

    Serve the dumplings warm, drizzled with the butter sauce, and sprinkle with grated Parmesan cheese.
