Prepare the Dough
In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, melt the butter and let it cool slightly. Add the eggs and vanilla extract, mixing well. Gradually add the dry ingredients to the wet mixture, stirring until combined. Fold in the chopped almonds.

Shape and Bake
Preheat the oven to 350°F (175°C). Divide the dough in half and shape each half into a log on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until golden brown.

Slice and Bake Again
Remove the logs from the oven and let them cool for 10 minutes. Slice the logs diagonally into 1-inch thick pieces. Arrange the slices cut side up on the baking sheet and return to the oven for another 10-15 minutes or until crisp.

Serve
Allow the biscotti to cool completely before serving. Pair with a glass of vin santo for an authentic Tuscan experience.
