    Prepare the Ingredients

    Gather all ingredients and prepare the halibut by patting it dry with paper towels. Season both sides with salt and black pepper.

    Sauté Aromatics

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.

    Add Tomatoes and Wine

    Stir in the canned diced tomatoes and dry white wine. Bring to a simmer.

    Add Capers and Oregano

    Add Pantelleria capers and Calabrese oregano to the skillet. Stir everything together.

    Cook the Halibut

    Gently place the halibut fillet into the skillet, spooning some of the sauce over the top. Cover and cook for about 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.

    Prepare the Crostone

    While the fish is cooking, toast the bread slices until golden brown. You can brush them with a little olive oil for extra flavor.

    Serve

    Once the halibut is cooked, remove from heat. Serve the fish on the toasted bread crostone, spooning some of the sauce over the top. Garnish with chopped fresh parsley.
