Prepare beef
Pat the wagyu slices dry with paper towels. If slices are thicker than 2–3 mm, briefly freeze 20–30 minutes and then slice thinly against the grain to 2–3 mm thickness.

Marinate
Place the wagyu in a shallow bowl. Add 2 tbs light soy sauce, 1 tsp sesame oil, 1 tsp minced garlic, 1 tsp ground black pepper, and 1 tsp sugar. Gently toss to coat every slice. Cover and refrigerate for 15–20 minutes — do not marinate too long to avoid breaking down the delicate wagyu texture.

Add sesame seed garnish
If using, sprinkle 1 tsp toasted sesame seeds into the marinade and toss once more just before breading.
Breading and Frying

Set up breading station
Arrange three shallow dishes: one with 1 cup all-purpose flour seasoned with 0.5 tsp salt, one with 0.5 cup corn starch, and one with two beaten eggs mixed with 2 tbs cold water (egg wash). If using panko, place 1 cup panko in a fourth dish.

Bread the slices
Working in batches to avoid overcrowding, dredge each marinated wagyu slice first in the flour (shake off excess), then dip in the egg wash, then press into corn starch or panko (for extra crisp, use panko). Place breaded slices on a wire rack or tray.

Heat oil
Pour oil into a skillet to a depth of about 1/4 inch (or 1 cup in a medium skillet). Heat over medium-high until shimmering and a breadcrumb test sizzles immediately (about 175–180°C / 350–360°F). If you have a thermometer, target 175°C.

Fry
Fry slices in a single layer in batches for 30–45 seconds per side, turning once. Wagyu is rich and thin; the goal is a golden crisp exterior while keeping interior tender—do not overcook. Adjust heat to maintain oil temperature. Transfer cooked slices to a paper towel-lined plate or wire rack to drain.

Finish and season
While still hot, lightly sprinkle a pinch more salt over the fried slices to taste.
Soy-Vinaigrette Dipping Sauce

Whisk together 2 tbs light soy sauce, 1 tbs rice vinegar, 0.5 tsp sesame oil, 0.5 tsp sugar, 0.5 tsp minced garlic, 1 tbsp finely chopped green onion, 0.5 tsp toasted sesame seeds, and 0.25 tsp chili flakes (optional). Taste and adjust balance — add a little more vinegar for tang or a touch more sugar for sweetness. Let sit 5–10 minutes for flavors to marry.
Plating and Garnish

Arrange fried wagyu yukjeon on a warm serving plate. Garnish with finely sliced green onion and julienned carrot for color. Serve with lemon wedges and the soy-vinaigrette dipping sauce on the side. For a more traditional touch, serve alongside steamed rice and kimchi (if halal-certified).
